Extra-Sweet Roasted Sweet Potatoes


Extra-sweet roasted sweet potatoes are amazing, not sugar added. Just the sweet potatoes cooked in a way to natural sweet them.

  • Ingredients:

  • 5 lbs sweet potatoes, peeled and cut into 1/2-inches disks
  • 1/4 cup olive oil
  • Himalaya Pink Salt
  • Black Pepper
  • Steps:

1- Bring 3 quarts of water to a boil in a large pot over high heat. Remove from the heat and add 4 cups of room-temperature (70°F) water, then immediately add the potatoes and cover the pot. Place in a warm spot and let stand for at least 1 hour, and up for 3 hours. 

2- When ready to roast the potatoes, adjust the oven racks to upper-and lower-middle positions and preheat the oven to 400°F. Drain then sweet potatoes and transfer to a large bowl. Toss with olive oil and season to taste with salt and pepper. 

3- Spread the sweet potatoes on two rimmed baking sheets and roast until the bottoms are browned, about 30 minutes. Carefully flip the potatoes and bake for 20 more minutes. 

4- Serve immediately.
